JOHN & PAULINE LARKIN

Passionate about all things French, the wines, the food, the sunshine, the art, the light and the culture. That is, all things except one. Namely, the sometimes stuffy unfriendly welcome often experienced in top hotels and restaurants. Well, they’ve fixed that here with their helpful smiley team.
The Larkin’s started their careers in London in the world of art and design and first discovered the Cote d’Azur in their early 20’s. After that, they just kept coming back until eventually they bought a rundown old hotel overlooking the Mediterranean with a completely overgrown secret garden. Putting their design skills to work they completely rebuilt the place, creating the pool and adding character and detail to the buildings. Provencale architecture with a contemporary feel.
PASTIS HOTEL opened in 2005 and has been evolving ever since. It is filled with their personal collection of 20th century art, photography and objets d’art for all guests to enjoy.
Last year PASTIS KITCHEN opened and this year it will start the season with a brand new enlarged kitchen and more tables ready to welcome more guests.

THE TEAM

Heading up the front of house is GUILLAUME always ready to welcome you as if you’re on old friend. While our Chef NICHOLAS ESSEX and his team will treat you to delicious seasonal dishes from his market menu. Taking old favourites and making them even better, searching out new recipes and finding the best organic and specialist ingredients around.

Head Chef

Our head chef started his career in the Cotswolds, England working in Michelin star restaurant The Kingham Plough. Moving to London, he quickly worked his way up the ladder in some of the best restaurants at that time.  Jamie Oliver's Caravan (Michelin 2016 & 2017) and Smokehouse Chiswick (Michelin 2017 & 2018). After which he became head chef for Raymond Blanc, Southbank London.
Now with all this experience behind him, at only 32 years, he is working the winters in Chamonix and fortunately for us the summers here in Saint Tropez.

KRYSTIAN ZURAWSKI
Sous Chef

Krystian is the perfect choice to work with Nicholas. Both of similar ages with the same passion for creating the best food possible. Having worked in some of the best restaurants in the Golfe of Saint Tropez including Villa Belle Rose, Muse and Colette at Sezz, we are happy to welcome him into the Pastis Kitchen team.
